Turkey Sausage

1/4 cup brandy
1 tbs chopped fresh thyme -or- 1 tsp dried thyme
1/2 tsp ground cloves
1/4 cup finely minced onion
1/2 tsp ground white pepper
1/2 tsp salt
1 1/2 lb ground turkey
6 egg whites

NOTE: For this sausage, the turkey should be 2 parts dark meat to 1 part white meat. Ground turkey from the supermarket works well in this recipe.

COMBINE BRANDY, THYME, CLOVES, onion, pepper and salt in a small saucepan and place over medium heat. Cook 3 minutes, then place the mixture in a mixing bowl, add the ground turkey and egg whites and mix well. Form into patties. Grill or cook sausages and serve immediately.

Country Style Turkey Sausage

1 slightly beaten egg white
1/4 c finely chopped onion
1/4 c finely snipped dried apples- or- 1/2 c finely chopped apples
3 tbs quick-cooking oats
2 tbs snipped fresh parsley
1/2 tsp salt
1/2 tsp ground sage
1/4 tsp ground nutmeg
1/4 tsp pepper
Dash ground red pepper
1/2 lb lean ground turkey

In a medium bowl, combine the egg white, onion, dried or fresh apples, quick-cooking oats, parsley, salt, sage, nutmeg, pepper and ground red pepper. Add the ground turkey; mix well. Shape mixture into eight 2" wide patties. Grill or cook sausages and serve immediately.

Turkey Breakfast Sausage

1 lb ground turkey
2 garlic cloves, minced
1/4 cup onion, chopped
1 t fresh sage, chopped
1 t fresh thyme, chopped
1 t fresh basil, chopped
1/2 tsp salt
1/4 tsp black pepper
1/4 cup soda cracker crumbs
1 tbs white wine or water

Mix all ingredients thoroughly with a spoon or your hands; shape into patties or links and brown in a skillet, or use as bulk sausage in recipes.

Turkey Sausage

2 lbs ground turkey
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp dried savory
1/4 tsp pepper
1/4 tsp marjoram
1 tbs chopped cilantro
1 tsp paprika
1 clove garlic, minced

In a large mixing bowl, using a mixing spoon or your hands, combine all ingredients. Make 1-inch meatballs by rolling the turkey sausage mixture in your hands. Flatten the meatballs with the palm of your hand to form patties.

Turkey Sausage

3 lbs ground turkey
1/2 tbs coarse kosher salt
1 tbs ground sage
1/2 tsp freshly ground black pepper
1 tsp dried rosemary
1/4 tsp ground ginger
1/2 tsp dried oregano
1/8 tsp cayenne pepper
2 tbs water

Mix ingredients thoroughly by hand. Form the mixture into patties, using about 1/4 cup for each.

Turkey Breakfast Sausage

1 tbs olive oil
1/2 cup finely chopped onion
1/2 cup shredded peeled Fuji or Braeburn apple
1 garlic clove, minced
1 tbs chopped fresh or 1 tsp dried thyme
1 tbs chopped fresh or 1 tsp dried rubbed sage
1 tsp salt
1/2 tsp black pepper
2 lbs ground turkey

Heat olive oil in a nonstick skillet over medium-high heat. Add onion and apple; sauté 3 minutes. Add garlic; sauté 30 seconds. Remove onion mixture from pan and cool completely. Combine onion mixture, thyme, sage, salt, pepper, and turkey, stirring well to combine.
